4 Easy Ideas to Craft the Perfect Back to School Lunch

No matter what school may look like this Fall for your family, your kids will still need lunch to fuel their learning. I recently invited the families from my homeschool co-op over for backyard fun and easy back to school lunch ideas. Then all you need to choose is a 

  • protein
  • fruit
  • veggie 

and your crafted lunch is ready to be devoured! 



Four easy options include: the classic PB & J, quesadilla, pizza, and sushi rolls. The quesadilla can be enjoyed either hot or cold depending on where your child is for school. I used mini tortillas for the quesadillas. For the pizza I used multi-grain sandwich thins, pizza sauce, cheese, and pepperonis (you can modify toppings to your child's liking). If you have leftover rice you can create sushi rolls. All you will need is the seaweed wrappers, cold rice, and veggies and/or fruit. Sushi combinations that my girls enjoy are mango avocado and carrot cucumber, but the flavor combinations are endless.

From there add a fruit, a veggie, pick a dairy (Danimal Smoothie or Horizon Organic Milk Box), add a NABISCO Multipack Snack and your lunch is complete!

As you can see these lunches are kid tested and mom approved!
